The Tie Luo Han (Iron Monk) cultivar is somewhat similar in expression to the Shui Xian cultivar. Perhaps that is why many local families grow and process it. This tea is traditionally roasted more strongly in Wuyishan, for a longer period of time on bamboo charcoal, although early references refer to processing as green tea. It is also very suitable for longer storage.
The tea leaves are traditionally roasted on bamboo charcoal for about 10 hours at 110 degrees, allowed to rest for two months and then roasted for 3 × 8 hours at about 90 degrees, always a month apart.
Aroma: attractive with intense notes of roasted bamboo, gingerbread spices, soy sauce, dried flowers, poppy seeds, cocoa biscuits and cocoa coating
Mouth: very full, attractive, velvety, reminiscent of whisky or old cognac, sweet, spicy with notes of dried flowers, plums, gingerbread spices and meadow honey
