Red tea from Ning Te region (Fujian). The place where this tea comes from is called Shou Ning. It is a small and quite unknown area, which is renowned for its old wild bushes. We had the opportunity to spend one week in this area, to get to know the local mountains and these old tea trees.
Almost all local teas, including this one, are processed in factories by machines. The leaves may be lightly bruised by tumbling in baskets or metal cylinders just like wulong teas, it is specific for it. Thanks to this processing, the tea is distinctly floral. Then we forgot it a little and it appears in our offer now. It was so good for this tea. Jin Mu Dan is a culitivar that was created by joining Tie Guan Yin and Huang Jin Gui. It is used very rarely, but enjoys great popularity in Shou Ning. In Wuyishan, where it is this cultivar mostly used to make wulong. In Shou Ning area is very usual for making red teas.
